Merlot
The wine is aged for 36 months, 24 of which in barrique.
When the grapes were harvested, the bunches were thinned, less ripe and with health problems, after which the grapes were manually harvested in small boxes.
Upon arrival in the cellar the grapes were destemmed, crushed, cooled to a temperature of 18 ºC and fermented with inoculum of selected yeasts in fermented steel with cooling system and automated pumping back system. The pumping over began after having reached a percentage in alcohol such as to extract a good amount of tannins.
Alcoholic fermentation of about 10 days while for another 5 lasted the contact skins/ wine. After separation from the skins the wine has conducted malolactic fermentation in steel at controlled temperature.
Winter was characterized by very low temperatures, accompanied by moderate rainfall. From February onwards, mild temperatures were recorded, with precipitation below normal with a consequent reduction in water reserves.
In March, the conditions of high temperature and low rainfall continued, favorable for the vegetative activity of the vine. The month of May was still characterized by lower rainfall.
The harvest was anticipated by about 15 days.
Wine from the tight ruby color that generates reflections of a bright purple. Sensations of compote of blueberries, pot pourri, sweet spices and goudron. Wine of great structure and depth, velvety and elegant. We recommend consumption at 18 degrees with an early opening of the bottle before consumption. Wine that bears aging up to 15 years.
Pairing with structured first courses and noble meats and blue cheeses.
