Wine aging on the yeasts in steel contanier.
Grapes harvested in the early morning hours, at the lowest temperatures of that period and cooled on arrival in the cellar, avoiding both oxidative phenomena that can compromise the aromatic potential, and undesirable fermentations. Vinification in white with soft pressing of the grapes in an oxygen-free environment in order to slow down the oxidative activity of the enzymes as much as possible.
Static decanting for 24 hours, inoculum of yeasts selected by ignition of alcoholic fermentation, fermentation at low temperature for 12 days in steel silos.
Very difficult and uncertain climatic conditions for the year 2023.The spring frosts and especially the heavy rains of May and June, brought a spread of fungal diseases. The climatic stability occurred from the second half of August until the end of the harvest allowed a good recovery in the ripening of the grapes.
Straw yellow color with aromas of chamomile and ripe peach that accompany a beautiful fresh feeling of citrus. In the mouth it has a fresh and intense attack with an important sapid finish. It is recommended to consume at a temperature of 10 ºC. in combination with important dishes, fish and white meat.
