Fermentation took place at low temperature for 12-14 days in steel silos. After the start of the alcoholic fermentation, part of the mass was poured into barriques where the alcoholic fermentation continued.
Grapes selected by Cru Grechetto already in the field and harvested early in the morning, at the lowest temperatures of that period and cooled on arrival in the cellar, thus avoiding both oxidative phenomena that can compromise the aromatic potential, both beginnings of unwanted fermentations. Vinification in white with soft pressing of the grapes in an oxygen-free environment in order to slow down the oxidative activity of the enzymes as much as possible. Static decanting for 24 hours to clean the must, inoculated with yeasts selected by triggering the alcoholic fermentation.
Aging of the masses of the wine by aging on the lees in barrique and steel for 4 months. Assembly of the masses and further aging in steel. Then in the bottle for another 2 months.
The 2022 vintage is characterized by low rainfall both in autumn-winter and spring-summer. Even at the temperature level the values were almost always above the average of the period thus bringing an advance of all the phenological phases of the vines. Great work in the vineyard to "compensate" the weather difficulties of the period. Very important management of the green to try to keep the bunches covered to avoid sunburn and dangerous stagnation of moisture around the bunches, cause of disease.
The rich soils of Montefalco give us a wine of intense yellow color with golden hints; The typical aromas of the grape, yellow fruit and Mediterranean plants, leave room for evolutionary notes of spices and candied citrus. The sip is enveloping and full while maintaining its freshness identity. To be served at 12/14 ºC, in combination with truffle pasta dishes, chicken and baked fish.
