The wine has been aged for 30 months, 14 of which in barrique and 3 in bottle.
The pumping over began after having reached a percentage in alcohol such as to extract a good amount of tannins, so that these, by binding to the coloring substance, stabilize it over time.
Alcoholic fermentation of about 12 days. After separation from the skins, the wine conducted malolactic fermentation in steel at controlled temperature.
Upon arrival in the cellar the grapes were destemmed pressed and cooled to a temperature of 18 C, then placed in a fermentation with inoculum of selected yeasts in fermenting steel with cooling system and automated pumping over system.
"Winter was characterized by very low temperatures, accompanied by moderate rainfall. From February onwards, mild temperatures were recorded, with precipitation below normal with a consequent reduction in water reserves. In March, the conditions of high temperature and low rainfall continued, favorable for the vegetative activity of the vine. The month of May was still characterized by lower than normal rainfall, thus favoring an advance of the phenological phases of about 10 days.
The harvest was brought forward by about 15 days. "
Deep ruby red color with garnet reflections. Intense aroma of red fruits with pulp, delicate balsamic note and toasted in the finish. Wine of body and good roundness, velvety and elegant.
We recommend consumption at 18 degrees with an early opening of the bottle before consumption. Wine that endures aging for 10 years.
Pairing with structured first courses and pork and game.
