The wine is aged in barrique and large cask for 12 months and another 4 in bottle.
A thinning of the less mature bunches with health problems was carried out during the harvest. Upon arrival in the cellar the grapes were destemmed and lightly pressed.
Fermentation with inoculum of selected yeasts in steel ferment with cooling system and automated pumping over system. The pumping over began after having reached a percentage volume in alcohol such as to extract a good amount of tannins so that these binding to the coloring substance stabilizes over time. Alcoholic fermentation of about 8-10 days. After separation from the skins the wine conducted malolactic fermentation in steel at controlled temperature.
Winter in line with the seasonal trend, abundant spring rainfall with a consequent lowering of temperatures that has caused an extension of the vegetative restart of the plant. Hot and dry summer with heat peaks above the seasonal average that allowed the recovery of the vegetative development of the vine. The late summer rains favored the water recharge of the soil with a consequent rebalancing of ripening of the fruit.
Very intense ruby red color with garnet reflections. The nose is complex and decisive and is characterized by its hints of plum jam, peach in syrup and spices. Very persistent in the mouth is a wine of great body and structure, warm, soft and with well polymerized tannins. It bears long aging even of 15/20 years. We recommend serving at a temperature of 20 degrees after pouring the wine carefully in a carafe, opening it in advance. In combination with succulent dishes and fatty meats.
