The wine is placed in barriques for aging.
As soon as the right ratio between developed alcohol and residual sugar is reached, the wine is racked, and then filtered to inhibit the further fermentation and remove from the wine all impurities of vegetable origin.
Harvest of the grapes took place at the end of September, with sorting of the best bunches, gently collected and deposited on mats for drying locally with temperature and humidity controlled for over 30 days. The grapes, after having reached the right sugar concentration, are destemmed and pressed and placed in fermentation in special silos where they will proceed with fulling and pumping over.
In terms of climate, 2018 was characterized by a mild and little rainy January, while rainfall came from February, with levels even higher than average. These rains also contributed to the water balance of the land, very useful especially after the drought of 2017. The vegetative cycle of the vine, which initially recorded a delay of a few days, has returned to normal thanks to the heat of April, so much so that the phenological phases have had a regular trend, thus producing a high number of bunches with a weight much higher than last year, due to the enlargement of the berries.
Very intense ruby red color with garnet reflections. The nose is complex and decisive, characterized by its hints of blackberry jams, dried plums, cinnamon and biscuits, licorice finish. Very persistent in the mouth is a wine of great body and structure, warm and soft. Tannins and structure perfectly balance the sugar present. It endures long aging 15/20 years. We recommend serving at a temperature of 20 degrees after uncorking in advance. Accompanied by desserts made with chocolate and spices. Also in the "traditional" version on a roast boar or lamb stew.
