The grapes are harvested manually in the early morning hours and cooled on arrival in the cellar to avoid both oxidative phenomena and the beginning of fermentation. Fermentation takes place at a low temperature for 12-14 days in a steel silo. Fermentation takes place at low temperatures.
White vinification with soft pressing of the grapes in an oxygen-free environment.
Assembly of the masses and further aging in steel, then in bottle for 12 months.
The 2020 vintage showed a regular winter and spring climate.The average production was generally not abundant, also because of some late frosts had in April that damaged the first buds opened on the earlier grapes. However, there is good average production.
The wine has an intense yellow color with golden hints, giving off sensations of eucalyptus, jasmine, pineapple, cedar jam and toasted peanut. Fresh and dry palate that gives a long and enveloping sip. Serve at 12-14 ºC, in combination with white meat or grilled fish.
