Aging on the lees in steel and 2 months of bottle.
White vinification with soft pressing of the grapes in an oxygen-free environment. Static decanting for 24 hours for the cleaning of the must, inoculum of yeasts selected by triggering the alcoholic fermentation.
Grapes harvested in the early morning hours, at the lowest temperatures of that period and cooled on arrival in the cellar, avoiding both oxidative phenomena that can compromise the aromatic potential, and undesirable fermentations. Fermentation at controlled temperature in steel.
The 2022 vintage is characterized by low rainfall both in the autumn-winter period and the
period spring-summer. Even at the level of temperatures the values were almost always above
above the averages of the period thus bringing an advance of all the phenological phases of the vines.
Great work in the vineyard to ""compensate"" the weather difficulties of the period. Very important management of the green to try to keep the bunches covered to avoid sunburn and dangerous stagnation of moisture around the bunches, cause of disease.
Intense straw yellow color, sensations of citrus, yellow peach and thyme. The palate is excellent, smooth and fresh. It is recommended to consume it fresh, at 10 ºC, ideal as an aperitif, white pasta dishes, fish and fresh cheese, white meat.
